Some recipes prove that simplicity is often the greatest culinary delight. A few quality ingredients, lovely Mediterranean flavors, and a generous drizzle of olive oil are all it takes to create a dish that is as elegant as it is delicious.
The crunch of a toasted slice of bread, the creaminess of fresh goat cheese, the rich flavor of confit tomatoes, the freshness of basil, the delicate taste of cured ham... All elevated by our Tradition olive oil, with its notes of ripened olives !
Ingredients (for 4 slices) :
For the confit tomatoes :
250g cherry tomatoes
1 to 2 tablespoons cooking olive oil
A few sprigs of thyme
1 clove of garlic
Fleur de sel & pepper
For the tartines :
4 thick slices of country-style bread
200g fresh goat cheese
6 thin slices of cured ham
A few fresh basil leaves
Crushed pistachios (optional, for crunch)
Fleur de sel & pepper
Traditional olive oil
Recipe :
Prepare the confit tomatoes. Preheat the oven to 140°C (fan-assisted).
Halve the cherry tomatoes and arrange them cut-side up on a baking sheet lined with parchment paper. Drizzle with a little olive oil, add the thyme and the garlic (lightly crushed, if desired), then season with fleur de sel and pepper.
Roast for 1½ to 2 hours, until the tomatoes are tender, slightly caramelized, and their flavors have concentrated. Let them cool slightly.
Toast the bread slices until golden brown and crisp.
Spread a generous layer of fresh goat cheese onto each slice.
Arrange the confit tomatoes over the cheese.
Top with a slice of cured ham, gently ruffled.
Sprinkle with a few fresh basil leaves and some crushed pistachios.
Finish with a pinch of fleur de sel, a grind of black pepper, and most importantly a generous drizzle of our Tradition olive oil just before serving.
