What if you could savor summer on a plate?

Freshness, beautiful colors, and a delicious blend of textures this summer salad has all the makings of a favorite warm-weather recipe.

The melt-in-the-mouth sweetness of roasted peaches meets the zing of cherry tomatoes, the freshness of arugula, the creaminess of burrata, and the delicate tartness of blackberries. It is all brought together by a homemade vinaigrette made with honey, lemon, and our "Subtile" extra virgin olive oil.

Ingredients (for 4 servings) :

For the salad :

  • 3 to 4 ripe yet firm peaches
  • 250g cherry tomatoes
  • 100 to 125g arugula
  • 100g fresh blackberries
  • Mozzarella balls
  • 1 handful of pumpkin seeds
  • 20g butter
  • Fleur de sel & pepper

For the vinaigrette :

  • Mild olive oil
  • 1 tablespoon honey
  • Juice of half a lemon
  • Salt & pepper

Recipe :


Start by washing the peaches and cutting them into wedges.
Melt the butter in a hot pan, then add the peach wedges. Roast them for a few minutes on each side until they are beautifully golden and lightly caramelized.
Set them aside to cool slightly.
For the dressing, combine the Subtile olive oil, honey, lemon juice, a pinch of salt, and pepper in a small bowl or pitcher. Whisk vigorously until the dressing is smooth and well-blended.
Wash the cherry tomatoes and cut them in half. Wash the blackberries as well.
Arrange the arugula on a large platter or individual serving plates. Add the cherry tomatoes, blackberries, and roasted peach wedges. Add the mozzarella.
Sprinkle generously with pumpkin seeds for crunch.
Add the dressing and serve immediately.
