Sometimes, just a few simple ingredients are all it takes to rediscover the flavors of Provence. With their soft texture, delicate honey aroma, and floral notes of lavender, these olive oil-infused madeleines are an invitation to indulge.
Lavender-infused olive oil adds a unique and refined touch to this recipe. Combined with honey, it reveals subtle aromas reminiscent of summer afternoons under the Provençal sun.
Ingredients (for about 20 madeleines) :
2 eggs
80g sugar
2 tablespoons lavender honey
100g flour
1 teaspoon baking powder
60ml olive oil
1 pinch of salt
A few edible dried lavender flowers (optional)
Recipe:
- In a bowl, whisk the eggs with the sugar until the mixture turns pale.
- Add the honey, then the lavender-infused olive oil, and mix.
- Fold in the flour, baking powder, and salt.
- Cover the batter and let it rest in the refrigerator for at least 1 hour. This step is essential for achieving the famous "hump" of madeleines.
- Preheat your oven to 220°C (425°F).
- Grease the madeleine pan and dust with a little flour, gently tapping the sides to remove any excess. Fill the madeleine molds three-quarters full.
- Bake for 4 minutes at 220°C (425°F), then reduce the temperature to 180°C (350°F) and continue baking for 5 to 6 minutes.
- Let cool slightly before unmolding.
For an even more indulgent treat, lightly drizzle the cooled madeleines with a little lavender honey or serve them with a lavender flower infusion.
Enjoy!
