Honey and Lavender Olive Oil Madeleines

Lavender-infused olive oil adds a unique and refined touch to this recipe. Combined with honey, it reveals subtle aromas reminiscent of summer afternoons under the Provençal sun.

Ingredients (for about 20 madeleines) :
2 eggs
80g sugar
2 tablespoons lavender honey
100g flour
1 teaspoon baking powder
60ml olive oil
1 pinch of salt
A few edible dried lavender flowers (optional)

Recipe:

  1. In a bowl, whisk the eggs with the sugar until the mixture turns pale.
  2. Add the honey, then the lavender-infused olive oil, and mix.
  3. Fold in the flour, baking powder, and salt.
  4. Cover the batter and let it rest in the refrigerator for at least 1 hour. This step is essential for achieving the famous "hump" of madeleines.
  5. Preheat your oven to 220°C (425°F).
  6. Grease the madeleine pan and dust with a little flour, gently tapping the sides to remove any excess. Fill the madeleine molds three-quarters full.
  7. Bake for 4 minutes at 220°C (425°F), then reduce the temperature to 180°C (350°F) and continue baking for 5 to 6 minutes.
  8. Let cool slightly before unmolding.

For an even more indulgent treat, lightly drizzle the cooled madeleines with a little lavender honey or serve them with a lavender flower infusion.
