For the finishing touch, we add a drizzle of our Lemon Olive Oil a surprising combination bursting with freshness !

Ingredients :

  • 4 untreated lemons
  • 200 ml fresh lemon juice
  • Zest of 2 lemons
  • 120 g sugar
  • 200 ml heavy cream
  • 200 ml whole milk
  • 3 egg yolks
  • 1 tablespoon honey
  • Lemon-infused olive oil for the finishing touch

Recipe :

In a saucepan, heat the milk, cream, and lemon zest. Bring gently to a simmer, then remove from the heat and let steep for about ten minutes.
Meanwhile, whisk the egg yolks with the sugar and honey until the mixture lightens in color.
Gradually pour the hot milk-and-cream mixture over the egg yolks while whisking constantly. Pour the mixture back into the saucepan and cook over low heat, stirring continuously, until it thickens slightly and coats the back of a spoon. Be careful not to let it boil.
Stir in the fresh lemon juice. Strain the mixture to remove the zest, then let it cool completely.
Refrigerate for at least 4 hours, or ideally overnight.
Churning: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer's instructions. If you don't have an ice cream maker, pour the mixture into an airtight container and place it in the freezer. Stir vigorously every 30 to 45 minutes for about 3 hours to minimize ice crystal formation.
Once the ice cream is ready, generously fill the hollowed-out lemon shells.
Place them in the freezer for about an hour so the ice cream firms up before serving.
To serve, drizzle a little lemon-infused olive oil over each portion. Finish with a garnish of lemon zest for a lovely presentation.

Bon appétit !

Pourquoi choisir l'huile d'olive citron

Accord Parfait
