Ingredients (for several sandwiches):
Toasted slices of country bread
150g cream cheese or ricotta cheese
120g shelled fresh broad beans (or frozen)
5 finely sliced radishes
Olive oil
Chili pepper
Juice of 1/2 lemon
A few chopped fresh herbs (parsley, chives, or mint)
Salt & pepper
Recipe:
Cook the broad beans for 3 to 4 minutes in a saucepan of boiling salted water, then rinse them under cold water. Remove the thin skin around the beans if necessary for a more tender texture.
Toast the bread slices until golden brown and crispy.
To assemble the sandwiches: Spread the cream cheese generously on each slice of bread. Add the broad beans, then the sliced radishes.
Season with lemon juice, salt, and pepper, then add the chopped fresh herbs.
Finish with a generous drizzle of chili-infused olive oil on each slice for a touch of zest and aroma.
Serve immediately, on their own or with a green salad.
