Goat cheese, honey, and walnut crêpes

Ingredients (serves 6) :

For the crêpe batter :

1 pinch of salt
250g flour
3 eggs
500ml (1/2 L) milk
2 tablespoons "Création" green-fruity olive oil

Filling ideas (serves 6) :

200g goat cheese
3 to 4 tablespoons honey
60g walnuts
Salt & pepper

Preparation :
In a large mixing bowl, beat the eggs and salt together. Gradually whisk in the flour to form a batter, then slowly add the milk. Finally, add the olive oil and mix well until the batter is smooth and uniform.
Let the batter rest for 1 hour.
Heat a non-stick pan over medium heat. Pour a small ladleful of batter into the center of the preheated pan. Tilt the pan in all directions to spread the batter evenly across the bottom. When the edges begin to lift and the underside turns golden, carefully flip the crêpe with a spatula. Cook the other side briefly.
Preparing the filling: coarsely chop the walnuts and lightly toast them in a dry pan to bring out their flavor. Slice the goat cheese into rounds or crumble it.

To serve, place a crêpe on each plate. Add pieces of goat cheese, sprinkle with toasted walnuts, drizzle with a little honey, and add a grind of black pepper.

Serve immediately.
