What's the secret to this mint-infused olive oil?
This oil is made from olives and fresh mint leaves, crushed and extracted together.
The mint is harvested from spring to late summer, then stripped of its leaves and frozen to fully preserve its aromas until the olive harvest in November and December. The frozen mint leaf loaves are then placed in the mill along with the olives. Their solid state allows for optimal pulverization during the crushing process.
The resulting paste is then kneaded, centrifuged, and filtered to remove all traces of moisture. This method guarantees a perfect fusion of flavors, capturing all the natural freshness of the mint.
What are the aromas?
Very fresh and vegetal, this oil reveals intense mint notes, both invigorating and slightly peppery. It provides an immediate sensation of freshness and a pleasant, lingering finish.
What type of olive is used in this oil?
This oil is based on a blend of carefully selected olives: Arbequina, Arboussane, and Koroneiki. Their natural balance makes them an ideal base for flavored olive oils.
