What's the secret to this basil-infused olive oil?
We've selected olives that produce a slightly milder oil (Salonenque). The basil is harvested in July and August, then the leaves are removed and frozen to preserve its aroma until the olive harvest in November and December. The frozen blocks of basil leaves are fed into the mill along with the olives. This solid form of basil allows it to be pulverized as it enters the mill.
The resulting paste is then kneaded, centrifuged, and filtered to remove any remaining moisture.

The secret to the pronounced aroma of this basil-infused oil lies primarily in the very high quantity of basil used: this oil contains 10% fresh basil.
