Cold pea soup & basil whipped cream

A recipe for the whole year!

For the seventh part of our culinary series, we offer you a creamy recipe for pea soup with basil whipped cream.

Ideal in summer and winter, you will surprise your guests with this recipe full of pep!

Ingredients for the velouté (for 8 people):

  • 2 spring onions
  • 1kg of peas
  • 1L of water
  • 1 C; tablespoon of olive oil
  • 2 chicken broths
  • About twenty basil leaves

Recipe :

1. Slice the onions and melt them in the hot oil. Meanwhile, place your crème fraîche in the freezer for 10 minutes

2. Add the peas, chicken stock and 1L of water

3. Let them cook for 15 minutes, until they are tender. Pepper

4. Remove the pan from the heat and let cool

5. Add the fresh basil then mix with a blender in smoothie position, until you obtain a fine preparation

6. Whip the crème fraîche into whipped cream. As soon as it is 3/4 thick, add salt, pepper and basil olive oil to taste. Then whisk again quickly

7. When the pea soup is very cold, serve it as soon as possible topped with a cloud of whipped cream

THE LITTLE ADDITION: in winter you can also use frozen peas and serve your soup hot with very fresh whipped cream
