A simple and comforting recipe, where the creaminess of ricotta blends with the zest of lemon, all enhanced by olive oil that adds sweetness and balance.
Ingredients (serves 3-4):
400g pasta
250g ricotta cheese
1 lemon (zest and juice)
4 tablespoons of extra virgin olive oil
50g Parmesan cheese (optional)
Salt & pepper
Recipe:
Cook the pasta in a large pot of boiling salted water according to the package directions.
In a bowl, mix the ricotta with the lemon zest and juice. Add the extra virgin olive oil and mix until smooth and creamy.
Drain the pasta, reserving a small ladleful of the cooking water. Add the pasta directly to the pasta mixture. Gently mix, adding a little cooking water to loosen the sauce if necessary. Season with salt and pepper.
Serve immediately, with freshly grated Parmesan cheese if desired.
