Indulgent, comforting, and decidedly Mediterranean, this creamy spinach and feta orzo proves that just a few well-chosen ingredients are all it takes to create a simple yet delicious dish.

The mildness of the pasta and cream balances perfectly with the fresh, earthy notes of the spinach and the salty, melt-in-the-mouth feta. The dish is delicately enhanced by a drizzle of lemon-infused olive oil, adding a sunny note and a lovely touch of zest to the finish. It is an easy, quick dish that is perfect for sharing at any time of year.

Ingredients (serves 2–3) :
200g orzo
150g fresh spinach
100g feta cheese
1 clove of garlic
200ml cream
A drizzle of cooking olive oil
A drizzle of lemon-infused olive oil
Salt & pepper

Recipe :
Cook the orzo in a large pot of boiling salted water according to the package instructions. Drain and set aside.
Heat the olive oil in a large frying pan, then add the finely chopped garlic clove. Sauté gently without letting it brown.
Add the fresh spinach and cook for a few minutes until wilted and tender.
Stir in the cooked orzo and the cream, mixing gently until creamy. Season with salt and pepper to taste.
Remove from the heat, add the coarsely crumbled feta, give it a final stir, and serve hot.
Just before eating, drizzle with a little lemon-infused olive oil to add freshness and balance to the dish.
