A generous, fresh, and balanced salad, perfect for a healthy and delicious lunch!
Ingredients (serves 2-3):
1 large handful of mixed greens
1 handful of fresh spinach
150g cooked lentils
1 cooked beetroot
1 avocado
80-100g feta cheese
1 handful of walnuts
A few seeds (pumpkin, sunflower, or sesame)
For the dressing:
3 tablespoons olive oil
1 tablespoon white seasoning
Salt & pepper
Recipe:
Wash and dry the salad greens and fresh spinach. Place them in a large salad bowl.
Cut the beetroot into cubes and the avocado into slices.
Add the cooked lentils and the roughly chopped (or whole) walnuts.
Crumble the feta cheese over the top. In a small bowl, whisk together the basil-infused olive oil, white seasoning, salt, and pepper for the vinaigrette.
Drizzle over the salad just before serving and toss gently.
For an extra touch of indulgence:
Add apple or pear slices for extra crunch
or pomegranate seeds
Add black or green olives to taste
Or incorporate roasted vegetables (sweet potatoes, squash, etc.) into your salad.
