Why choose a superior quality extra virgin olive oil?
This designation comes from the time it takes to knead our olives, which is reduced to 20 minutes and the temperature never exceeds 20°C. Regulations for the cold-pressed or cold-extracted designation allow temperatures up to 27°C. This process preserves all the aromas and reduces bitterness. Our Délicate olive oil is certified organic.
What are the aromas of Delicate?
This is a ripe fruity olive oil with herbaceous aromas on the nose, but more subtle than a green fruity oil. On the palate, the aromas are very smooth, with hints of dried fruit, almonds, and fresh hay. It is slightly more intense than our Subtile oil, as the olives are picked slightly earlier in the season (late November, early December).
What type of olive is used in this oil?
Discover our new extra virgin olive oil, a subtle blend of two distinctive Provençal varieties: Bouteillan and Aglandau. Bouteillan, a typical Provençal variety, brings a lovely freshness to the blend. It gives the oil a lovely liveliness on the palate. Aglandau, on the other hand, is known for its powerful aromas. It enriches the oil with a slight bitterness and a lovely peppery finish.
When are olives harvested?
The olives are harvested late in the season, between mid-November and early December, at an advanced stage of ripeness, when they are beginning to turn black. This late harvest allows for the development of sweeter, rounder, and more balanced flavors.

Because the olives are harvested late, they produce a sweet, fruity oil with very strong aromas.
