Savory pancakes with olive oil, pesto, ricotta & raw ham

Deliciously delicious pancakes!

Candlemas is fast approaching, at this opportunity, we offer you a simple and delicious recipe that will please everyone!

For 6 persons :

Ingredients :

For the pancake batter:

  • 1 pinch of salt
  • 250g of flour
  • 3 eggs
  • 1/2 L of milk
  • 2 tablespoons Creation fruity green olive oil

For garnish :

  • 8 slices of raw ham
  • 150g ricotta
  • Dried tomatoes to measure according to your tastes
  • 40 g of pine nuts

For the homemade pesto:

  • 8 tablespoons Creation fruity green olive oil
  • 60 g of basil
  • 50 g of pine nuts
  • 60 g grated parmesan
  • 1 clove of garlic

Preparation :

1. Preparation of the pancake batter : in a large bowl, beat together the eggs and salt. Gradually add the flour while whisking to form a dough, then gradually add the milk. Finally add the olive oil. Mix well.

Let the pancake batter rest for 1 hour.

2. Meanwhile, prepare your homemade pesto . Wash and dry the basil leaves. Grate the parmesan and lightly toast the pine nuts in a dry pan until golden.

3. In a blender, combine the basil leaves, toasted pine nuts, garlic and parmesan. Mix at medium speed until you obtain a coarse texture.

4. While mixing, slowly pour in the olive oil in a steady stream. Continue until the pesto reaches the desired consistency. Add salt and pepper to taste. Keep in mind that cheese already contributes salt, so taste before adding too much.

5. Transfer the pesto to a clean, airtight jar. If not using immediately, cover the surface of the pesto with a thin layer of olive oil to prevent it from oxidizing.

Tip: Pesto can be stored in the refrigerator for a week, or frozen for future use.

6. Heat a non-stick pan over medium heat. Pour a small ladle of batter into the center of the preheated pan. Tilt the pan in all directions to evenly distribute the batter on the bottom. When the edges start to come away and the pancake turns golden brown underneath, carefully flip it with a spatula. Let the other side cook for a short time.

7. Garnish your pancakes by adding your pesto according to your taste , then ricotta, dried tomatoes, raw ham and pine nuts.
