Our black fruity olive oil is a virgin oil made using traditional methods. 

In the olden days, olives were left to ferment in the attics, before extracting the oil in order to obtain the best yield.

By doing so the olive oil obtains aromas of black olive, tapenade and even truffle.

This very popular olive oil disappeared with the arrival of new modern mills.

However, we have managed to recreate this particular taste by letting the olives mature, in a very controlled manner, away from air and humidity with regular temperature checks before extracting the olive oil.

Characteristics of the black fruity oil

The black fruity olive oil releases flavours of black olives, tapenade, mushrooms and truffle. The black fruity olive oil distinguishes itself from the green fruity olive oil as it does not develop any notes of fresh fruits or plant aromas hence no bitterness or pungency.

It has strong aromas of: black olive, black tapenade and truffe
