A Picholine monovarietal oil, harvested late in the season, when it turns black. It is much sweeter, not very fiery, without bitterness and fruity with very marked aromas of dried fruit and ripe fruit.

Only one variety of olives selected for this cuvée: picholine. A large green olive, widely used in table olives because of its firmness, its beautiful appearance and its crispness. Harvested late in the season, that is to say when it turns black, it gives a sweet and fruity oil with very marked aromas.
Tasting: On the nose: still some herbaceous aromas of fruity green but more discreet.
On the palate: great sweetness and above all, at the end of the palate, an obvious banana, cooked artichoke and ripe apple aroma.
